An afternoon at High Tea

Take your mum to High Tea – The Victoria Room in Darlinghurst is one of my favourite places to spend the afternoon with tea, a glass of bubbles and delicious small treats!

Sunday morning at Yum Cha

And whilst we’re on the topic of food, why not head to your local Yum Cha late Sunday morning. My personal go-to place is Zilver in Haymarket.

You can also head outdoors, pack a picnic and set out to of Sydney to Kiama’s blowhole, or at the hidden gem that is Wendy Whiteley’s Secret Garden tucked in at Lavender Bay. For more of a full day out, check out Belgenny Farm in South Camden where you can also wonder through the various food and market stools, check out the old historic buildings or even book a seat at their gourmet buffet lunch.

Whatever you end up doing, make sure you don’t leave it to the last minute – be organised and make reservations if needed! And of course, Happy Mothers Day to all the mothers, grandmothers, and great grandmothers out there!

I think we’ve all done it – searched frantically last minute to find the perfect dress for a special occasion, or often spent lots of money on a lovely dress, only to not wear it again.

The perfect online dating profile

I spoke with the lovely Elly Klein this week – a professional writer with a passion for relationships. She was the author of the thoroughly humorous book Men are like a Box of Chocolates, and amongst many things, she is also a successful online dating profile writer. She was kind enough to share some of the do’s and don’ts for creating the best profile and help increase your chances of finding love!

Don’t be negative 

Be positive about life, love and online dating – show that you’re excited to find love. Don’t infect your profile with lines like “I don’t usually don’t do this kind of thing”. After all these days, a third of marriages are from finding love thanks to the web!

Fill out your profile properly 

People want to see you’re committed, so a half completed profile is not going to help. Answer all the questions and upload your best profile photo!

Let your personality shine through 

If you’re funny, don’t just say that you are, actually BE funny. If you’re spiritual, show that you are by listing yoga or meditation as one of your hobbies. Love to travel? Then post up your favourite travel photos… Getting your personality across in words can be tricky, so make sure what you say gives a potential love interest a good idea of the kind of person you are.

Stay away from the clichés 

Everyone loves walking on the beach at sunset and choc tops at the Tuesday night movies! Stay away from the clichés and be original and true when it comes to talking about what you like to do. If you like to hike through national parks on your weekend, then say it!

The history of the bun

It seems that every year, the deliciously sweet & sticky hot cross bun, hits the supermarket shelves earlier and earlier, with some even going on sale from New Years Day!

Well, if you think that the controversy around this is bureaucracy gone a little mad, then maybe we should consider this. … In 1592 Queen Elizabeth I put a ban on the making of hot cross buns outside Good Friday and Christmas – that means that for 363 days a year, you could not make, sell or even eat the sweet morsels!

And if you were found with them, they were confiscated and given to the poor. Whilst it may seem a little strict, maybe she was onto something here!

So as you eat your hot cross buns this weekend, spare a thought for those back in 1592, and enjoy that sweet handful of sugar & spice just a little more! And should you miraculously have any spare after the long weekend – then why not turn them into a warm and gooey Bread & Butter Pudding!

Poached Plums

Juicy plumsWhilst it may not seem like Summer is ending just yet, it won’t be too long before the days start to get a little crisp, and delicious fruits like peaches and plums leave our grocer’s shelves.

Grab a bag full of delicious plums while you can, to make this simple Poached Plum recipe. Infused with classic warm flavours like cinnamon and vanilla, it’s the perfect Autumn dish.

Poached Plums

You’ll need:

4 cups (800g) caster sugar

3 litres (12 cups) water

2 star anise

1 cinnamon stick

1 vanilla bean, seeds scraped

14 plums, peeled, halved and stones removed

Place caster sugar, water, star anise, cinnamon stick and vanilla bean in a medium saucepan and bring to the boil. Add the plums and simmer for 30-60 minutes or until tender. Remove from the heat and allow to cool.

Tip: ensure the plums stay fully submerged in the liquid and they will keep for 2-3 weeks in the fridge.

 

Cinnamon & Hazelnut Trifle

Use the plums in this beautiful Cinnamon and Hazelnut Trifle. You can either make a jelly using the syrup, or reduce the liquid until it’s thick and sticky. Serve with crushed hazelnuts and double cream for a simple and delicious dessert.

Honouring your loved ones.

Honouring lost loved ones during a wedding or celebration is really important for many of us. It often becomes quite special and significant, especially if they played a big role in your life. And it’s important to plan ahead, as it can make it much more calming for you knowing that honouring them is planned into the day. It can help you emotionally prepare.

There are so many special ways to honour your loved one; it can be done privately, or more publicly depending on what you feel most comfortable doing.

If a loved one has recently passed, you may want to remember them more privately, as it may be too overwhelming to openly honour them.

Remembering this loved one’s personality and what they would have been comfortable with is also something to think about. They may have loved being the centre of attention and therefore something more public may be suitable. They may have been also one to shy away from the spotlight, so something more discrete may be best. It can be challenging and really must be thought through whilst keeping them in mind, as well as yourself, and those who will be at your celebration who knew and loved them too.

Here are some memorable ways to include that person in your day:

Keep them close to your heart

Keep on yourself something small and personal they have given as a gift, or an heirloom passed down through the family. A beautiful piece of jewellery or handkerchief which you can wear, or incorporate into your wedding bouquet perhaps. Why not sew a small photo of them into your wedding dress so they are kept close to you.

These are some special ways to honour your loved one a little more privately, especially if they have only recently passed and it’s still very emotional for you.

Treasure their past possessions

They may have passed down their favourite pen which you can use to sign the registry, or champagne flutes that can be used to toast. Or perhaps their wedding cake knife or beautiful set of cutlery which you can set on the bridal table.

Take a moment

This may be in the form of having a photo of them framed, or a candle lit and placed at the front table to give significance that you’re honouring them.

Many people are also dedicating parts of their ceremony to loved ones. Reading their favourite poem, walking down the aisle to their favourite song or even just simply a moment of silence is a really personal way to have them be part of the day.

Toasting to them during speeches is of course really popular, especially if your guests knew and loved them too.

A walk down memory lane

Photo tables at receptions are becoming a really popular way for guests to take a look and remember loved ones by. These could be photos taken at their own wedding, a lovely portrait, or even photos they have had taken with you at your 18th birthday. People love to take a wander down memory lane through photos.

Share their sweet treats with your guests

Perhaps your grandmother passed down her family favourite sweet treat recipe; why not use that as the Bonbonniere so everyone knows how delicious it was too! It’s a lovely way to honour them, and the process of making it would be just as special.

A few of their favourite things

If they loved jersey caramels, make caramel a flavour of one the cake tiers. Or if roses were their favourite flower, why not include it in your bouquet, or as part of the reception floral decorations. Maybe they were renowned for making a roast every Sunday for the family; can you perhaps incorporate that that into your menu?

 

Honouring a loved one is a really personal and emotional gesture. It comes down to what you’re comfortable with, and what feels the most memorable and significant for you.

A Wonderful Sydney Wedding

Perched above the iconic Sydney Opera House with unrivaled views towards Sydney’s Harbour Bridge and north shore, Bennelong Lawn provided the spectacular yet intimate spot for the celebration of this special wedding.

The elegant marquee was decorated with cascading walls of flowers, sparkling chandeliers and woven with the soft colours of beige, pink and apricot.

Guests were welcomed with perfectly chilled flutes of champagne and grazed amongst beautifully prepared food stations.

The prosciutto bar featured freshly shaved salami, prosciutto, fresh figs, buffalo mozzarella, whipped gorgonzola and rock melon.

For something from the sea, freshly shucked oysters, lobster medallions, citrus cured gravalax, smoked salmon and overflowing ice bowls of freshly peeled prawns filled the seafood bar. Oyster bloody mary shots were the perfect accompaniment.

An antipasti bar reflected the beautiful dishes of the Mediterranean. Watermelon tossed with feta and mint, Sicilian and black olives and lamb homemade dolmades.

The cheese station was made for a night of grazing where glass domes featured perfectly ripe wheels of brie, creamy aged cheddar and crumbling blue cheese.

Entertained by the legendary Steve Clisby and as the sun set upon the sparkling Sydney harbour, guests enjoyed a choice of oven roasted snapper fillets, eye fillets of beef or organic chicken breasts cooked with a herb butter for their main course.

For something sweet, homemade banoffee pies and a pavlova bar with an assortment of toppings providing the finishing touch.

A surprise firework display ended a magical evening under the stars as a night in Sydney’s beautiful botanic gardens came to a close.


Whiskey on the Green

There’s something special about the wild open spaces of a golf course. It provides an escape from the inner city hustle, a place to unwind and relax.

So when Glenmorangie Whiskey asked Katering to design a beautiful menu for a twilight dinner on the green of Bonnie Doon golf course, it was our pleasure to put together a night of appreciation and elegance.

The specially crafted three-course menu was paired with hand picked whiskeys and showcased hints of citrus and ginger throughout.

First course featured a trio of citrus seafood including lime and ginger crab dumplings, seared scallops and citrus tempura yabbie with ginger chutney.

As the sun began to set, guests were served an orange pepper venison with parsnip puree, baby fennel and onion jus.

For something sweet, a ginger crème brulee tart completed the evening.

As guests settled in with delicious food and Glenmorangie whiskeys, it was only the sprinklers that would tear them away from a beautiful night under the stars.

Friday’s French Martini

It’s Friday and Spring is just around the corner! Why not celebrate with Katering’s French Martini as featured in this month’s In Style magazine.

French Martini
serves 8

11/2 cups vodka

100ml Chambord (black raspberry liqueur)

2 cups pineapple juice

1 twist lemon peel

ice cubes

Place vodka, Chambord, pineapple juice and lemon peel in a large cocktail shaker with ice. Shake well until combined. Pour into champagne glasses.
