A Touch Of The Seasons

There’s nothing we love more than working with others who share our love and passion for food. At a recent dinner held in the historic Carnegie Hall in Darlinghurst, Katering had the pleasure of working with some well known Italian chefs, including Stefano Manfredi from Bells at Killcare, who taught us a few new tricks in the kitchen.

Working together, we created a beautiful menu inspired by the four seasons of the year.

Guests started with canapes reflecting the summer months, follwed by an entree inspired by Autumn and designed by Stefano Manfredi. His incredible dish of risotto di funghi e castagne (a mushroom and chestnut risotto) captured the wonderful autumn flavours.

The main was created by Armando Percuoco and was designed to reflect the winter months. A deliciously warming vitello con barbabietola e salsa verde (veal medallions with caramelised beetroot and salsa verde) was served with garlic and rosemary potatoes. 

For something sweet, Donato Toce put together a fabulous spring dessert of fragolina de bosco (wild strawberry sorbet), with a burnt honey mousse, bergamot jelly and pistachio crunch. 

The night perfectly captured how changing seasons influences our dishes and we had such fun working with a new team.

Wedding Videos: Why You Should Use Them

As the Creative Director for Katering’s fabulous events and weddings, Kate can’t recommend the use of videographers enough.

Worried about bright flashing lights and obtrusive crew? Relax. You’ll hardly notice the team at Soda are even there.

Kate recently styled a wedding for a wonderful couple who were thrilled with their decision to include video, in fact the bride said she loved it more than the photos.

“It captured the emotion on people’s faces and filled in the gaps that the bride doesn’t see on the day,” she said.

A Sparkling Night To Remember

The Strand Arcade in Sydney was turned into a scene reminiscent of an English white wedding to celebrate the launch of the commemorative Australian Marriage Equality ring on Tuesday night.

Designed by award-winning jewellery designer and creative director of Mondial, Nadia Neuman, all proceeds from the sale of the ring went towards Australian Marriage.

Katering was honoured to not only provide the delicious food on the night, but to also donate 20 signed copies of Kate’s wedding book to the first 20 rings sold.

As though at a wedding reception, guests were treated to a selection of hand-picked canapes including:

  • Yabbie en croute with lime aioli and avruga caviar
  • Smoked salmon served on a dill blini with horseradish, crème fraiche and pickled cucumber
  • Tuna tartare in a crisp cone with seaweed toasts
  • Chicken, herb and celery ribbon sandwiches
  • Caramelised onion and duck parfait with sauterne jelly on brioche crust
  • Peppered beef on a potato roesti with truffled aioli and rocket
  • Fresh asparagus with goats cheese and pesto mayonnaise wrapped in char grilled eggplant
  • Smashed broad beans, pecorino and mint on charred bruschetta

The sparkling and pivotal affair was attended by Sydney politicians and celebrities in what was a truly magical night.

Belle Readers Dinner

Katering had the absolute pleasure of hosting the Belle Readers dinner at the beautiful Roslyn Oxley Galleries in Sydney. Featuring special guest and artist Del Kathryn Barton, the art loving guests listened to her experiences and stories as an artist in what was a truly memorable night.

Belle readers were given an inside glimpse into the life of one of Australia’s most respected artists. With a focus on sensuality, creativity and passion, Grandiflora chose flowers that were open and in full bloom to create a sense of intimacy amongst the tables.

Featured in this month’s Belle magazine, readers are given a sneak peek into this private dinner including the recipes of Katering’s finely selected menu. Guests enjoyed open crab ravioli with tomato bisque to start and snapper with golden beetroot, snow pea, broad beans and fennel. The night came to a close with a cherry and chocolate mousse cake with a rich chocolate ganache.

An inspirational evening, the night was both personal and enriching and Katering is proud to have been part of such a wonderful event. 


Whiskey on the Green

There’s something special about the wild open spaces of a golf course. It provides an escape from the inner city hustle, a place to unwind and relax.

So when Glenmorangie Whiskey asked Katering to design a beautiful menu for a twilight dinner on the green of Bonnie Doon golf course, it was our pleasure to put together a night of appreciation and elegance.

The specially crafted three-course menu was paired with hand picked whiskeys and showcased hints of citrus and ginger throughout.

First course featured a trio of citrus seafood including lime and ginger crab dumplings, seared scallops and citrus tempura yabbie with ginger chutney.

As the sun began to set, guests were served an orange pepper venison with parsnip puree, baby fennel and onion jus.

For something sweet, a ginger crème brulee tart completed the evening.

As guests settled in with delicious food and Glenmorangie whiskeys, it was only the sprinklers that would tear them away from a beautiful night under the stars.

Wylies Baths

Located just a few hundred metres south of Coogee Beach in Sydney’s eastern suburbs, is the iconic Wylies Baths.

With sweeping 180 degree views over the Pacific Ocean and overlooking the famous Wedding Cake Island, it was the perfect venue for an intimate night raising money and awareness for breast cancer.

As the preferred caterer for Wylies Baths, Katering teamed up with The Professionals last week and transformed its marquee with soft shades of pink against a stunning backdrop.

Best of British

A Queen’s Guard, an English butler and a flying Union Jack…this farewell party was a celebration of all things British to mark the end of an Australian chapter.

Under the stars of a beautiful Sydney winter night, Katering transformed this family home into a stately English manor. Guests were greeted at the driveway by a formal Queens Guard before being welcomed into the home by an English butler for pints of lager, champagne and hearty British food.

The finely crafted menu included:

  • Mini Yorkshire puddings
  • Pigs in blankets
  • Smoked trout mousse with crostini
  • Bangers and mash
  • Butter chicken curry
  • Spotted dick and Eton mess for something sweet

As the night progressed, guests moved into the pop up nightclub for British cocktails and music.  The quintessential Sherlock Hound and Winter Garden were shaken to order and garnished with wedges of orange and delicate edible flowers.

A black London cab ferried guests home at the end of the night with memories of a world full of good friends, warmth and English charm.

Vittoria Coffee goes organic

To celebrate the launch of Vittoria Coffee’s new organic range, Katering created a beautiful breakfast menu that was a perfect mix of fresh seasonal fruit and warming organic produce.

The light and healthy breakfast included:

  • Assorted smoothies
  • Rhubarb and pear compote with low fat Greek yoghurt
  • Bircher muesli with grated apple, slivered almonds and berries
  • Sweet corn fritters with sour cream and smoked salmon

Part of the Aroma Festival at the Rocks in Sydney, guests were entertained under the Vittoria Coffee marquee with baristas making delicious coffees to order.

Pots of apples, native flowers and succulents created a rustic feel to reflect Vittoria Coffee’s new launch into the organic market. We were thrilled to be a part of this annual Sydney event.

Belle Artist’s Dinner

Katering recently had the pleasure of creating a special menu for the Belle Artist’s Dinner at Dinosaur Designs in Sydney. The evening was a celebration of fine food, wine, art and design and was sponsored by Petaluma wines.

Michael Reid took the stage and interviewed Louise Olsen and Stephen Ormandy from Dinosaur Designs. They spoke passionately about their empire, what’s in a design and what it is that inspires them. Whether it be something as simple as a word, their designs stem take something small and tell a beautiful story.

Guests were entertained with an intricately crafted three-course menu, here’s a sneak peek at what we served on the night.

  • Mud crab and pomelo salad
