A Touch Of The Seasons

There’s nothing we love more than working with others who share our love and passion for food. At a recent dinner held in the historic Carnegie Hall in Darlinghurst, Katering had the pleasure of working with some well known Italian chefs, including Stefano Manfredi from Bells at Killcare, who taught us a few new tricks in the kitchen.

Image

Working together, we created a beautiful menu inspired by the four seasons of the year.

Guests started with canapes reflecting the summer months, follwed by an entree inspired by Autumn and designed by Stefano Manfredi. His incredible dish of risotto di funghi e castagne (a mushroom and chestnut risotto) captured the wonderful autumn flavours.

Image

The main was created by Armando Percuoco and was designed to reflect the winter months. A deliciously warming vitello con barbabietola e salsa verde (veal medallions with caramelised beetroot and salsa verde) was served with garlic and rosemary potatoes.

For something sweet, Donato Toce put together a fabulous spring dessert of fragolina de bosco (wild strawberry sorbet), with a burnt honey mousse, bergamot jelly and pistachio crunch.

The night perfectly captured how changing seasons influences our dishes and we had such fun working with a new team.

Wedding Videos: Why You Should Use Them

As the Creative Director for Katering’s fabulous events and weddings, Kate can’t recommend the use of videographers enough.

Worried about bright flashing lights and obtrusive crew? Relax. You’ll hardly notice the team at Soda are even there.

Kate recently styled a wedding for a wonderful couple who were thrilled with their decision to include video, in fact the bride said she loved it more than the photos.

“It captured the emotion on people’s faces and filled in the gaps that the bride doesn’t see on the day,” she said.

Take a peek at Bianca and Caine’s wedding video here…

Their wedding day was an especially windy day and the video added to the movement and softness not captured in still photos.

The team at Soda are professional and passionate about what they do. Check them out here…

A Sparkling Night To Remember

The Strand Arcade in Sydney was turned into a scene reminiscent of an English white wedding to celebrate the launch of the commemorative Australian Marriage Equality ring on Tuesday night.

Image

Designed by award-winning jewellery designer and creative director of Mondial, Nadia Neuman, all proceeds from the sale of the ring went towards Australian Marriage.

Image

Katering was honoured to not only provide the delicious food on the night, but to also donate 20 signed copies of Kate’s wedding book to the first 20 rings sold.

Image

As though at a wedding reception, guests were treated to a selection of hand-picked canapes including:

  • Yabbie en croute with lime aioli and avruga caviar
  • Smoked salmon served on a dill blini with horseradish, crème fraiche and pickled cucumber
  • Tuna tartare in a crisp cone with seaweed toasts
  • Chicken, herb and celery ribbon sandwiches
  • Caramelised onion and duck parfait with sauterne jelly on brioche crust
  • Peppered beef on a potato roesti with truffled aioli and rocket
  • Fresh asparagus with goats cheese and pesto mayonnaise wrapped in char grilled eggplant
  • Smashed broad beans, pecorino and mint on charred bruschetta

The sparkling and pivotal affair was attended by Sydney politicians and celebrities in what was a truly magical night.

Southern Highlands Summer Weddings

Image

Magical, romantic and distinctly unique. The wedding of Anna and Brendon at Montrose Berry farm in Sutton Forest was a blend of wonderful personalities and unconventional tradition.

Image

This beautiful heritage country estate was transformed into a wonderland of magic. Reflecting the country surrounds, cabanas were dotted around the grounds and intricately decorated with moose heads, dark leather couches, candelabras and armchairs. The wedding party sat at a simple wooden table with white cushions and vibrant purple flowers.

Choosing a cocktail style wedding, guests enjoyed an antipasto table after the ceremony that was overflowing with ripe cheeses, olives, cured meats and freshly grilled vegetables.

Champagne and canapes including mini beef paninis kept guests well nourished before the more substantial dishes of barramundi served in abalone shells and lamb cutlets followed.

Belle Readers Dinner

Katering had the absolute pleasure of hosting the Belle Readers dinner at the beautiful Roslyn Oxley Galleries in Sydney. Featuring special guest and artist Del Kathryn Barton, the art loving guests listened to her experiences and stories as an artist in what was a truly memorable night.

Image

Belle readers were given an inside glimpse into the life of one of Australia’s most respected artists. With a focus on sensuality, creativity and passion, Grandiflora chose flowers that were open and in full bloom to create a sense of intimacy amongst the tables.

Image

Featured in this month’s Belle magazine, readers are given a sneak peek into this private dinner including the recipes of Katering’s finely selected menu. Guests enjoyed open crab ravioli with tomato bisque to start and snapper with golden beetroot, snow pea, broad beans and fennel. The night came to a close with a cherry and chocolate mousse cake with a rich chocolate ganache.

An inspirational evening, the night was both personal and enriching and Katering is proud to have been part of such a wonderful event.

Christmas is one of our favourite times of the year and we are busy basting hams, peeling fresh king prawns and baking Kate’s very own fruit cake recipe. Grab Kate’s family recipe in her newly released guide to weddings  – “The Australian Wedding Book”.

Piggy Boudoir

We love putting our heads together and brainstorming new menus, recipes and ways to feature our beautiful produce.

Here’s a sneak peek at Katering’s latest inspiration, the piggy boudoir.

Image

Seen recently at a cocktail party for the parents of Ascham school, the reinterpreted boudoir was a humorous play on elegance and tradition.

A chest of drawers held beautifully basted legs of ham, a traditional armchair overflowed with freshly baked baguettes and a decorated pouf became a platter of mustards and accompaniments.

Candelabras, a touch of pearls and beautiful French linen added the finishing touches.

Image

A seafood bar complimented the boudoir. Surrounded by lily pads and mother of pearl shells, guests could help themselves to freshly shucked oysters, salmon gravalax and ice blocks filled with prawns.

A Wonderful Sydney Wedding

Perched above the iconic Sydney Opera House with unrivaled views towards Sydney’s Harbour Bridge and north shore, Bennelong Lawn provided the spectacular yet intimate spot for the celebration of this special wedding.

The elegant marquee was decorated with cascading walls of flowers, sparkling chandeliers and woven with the soft colours of beige, pink and apricot.

Guests were welcomed with perfectly chilled flutes of champagne and grazed amongst beautifully prepared food stations.

The prosciutto bar featured freshly shaved salami, prosciutto, fresh figs, buffalo mozzarella, whipped gorgonzola and rock melon.

For something from the sea, freshly shucked oysters, lobster medallions, citrus cured gravalax, smoked salmon and overflowing ice bowls of freshly peeled prawns filled the seafood bar. Oyster bloody mary shots were the perfect accompaniment.

Image

Image

An antipasti bar reflected the beautiful dishes of the Mediterranean. Watermelon tossed with feta and mint, Sicilian and black olives and lamb homemade dolmades.

Image

The cheese station was made for a night of grazing where glass domes featured perfectly ripe wheels of brie, creamy aged cheddar and crumbling blue cheese.

Image

Entertained by the legendary Steve Clisby and as the sun set upon the sparkling Sydney harbour, guests enjoyed a choice of oven roasted snapper fillets, eye fillets of beef or organic chicken breasts cooked with a herb butter for their main course.

For something sweet, homemade banoffee pies and a pavlova bar with an assortment of toppings providing the finishing touch.

Image

A surprise firework display ended a magical evening under the stars as a night in Sydney’s beautiful botanic gardens came to a close.

Whiskey on the Green

Image

There’s something special about the wild open spaces of a golf course. It provides an escape from the inner city hustle, a place to unwind and relax.

So when Glenmorangie Whiskey asked Katering to design a beautiful menu for a twilight dinner on the green of Bonnie Doon golf course, it was our pleasure to put together a night of appreciation and elegance.

Image

The specially crafted three-course menu was paired with hand picked whiskeys and showcased hints of citrus and ginger throughout.

Image

First course featured a trio of citrus seafood including lime and ginger crab dumplings, seared scallops and citrus tempura yabbie with ginger chutney.

Image

As the sun began to set, guests were served an orange pepper venison with parsnip puree, baby fennel and onion jus.

Image

For something sweet, a ginger crème brulee tart completed the evening.

Image

As guests settled in with delicious food and Glenmorangie whiskeys, it was only the sprinklers that would tear them away from a beautiful night under the stars.

A Special Spring Christening

At one of our favourite Sydney locations, the lovely Nubia from Katering celebrated the christening of her son Romeo.

Image

Set amongst beautiful Callan Park in Balmain, Nubia picked some of her favourite Katering bites for a day of celebration and feasting with family and friends.

Image

Upon arrival at the historic Callan Park grounds, guests were offered canapés including garlic prawns with chorizo, smoked salmon on dill blini with horseradish, crème fraiche and salmon roe, steamed Peking duck crepes, mini Yorkshire puddings with caramelised onions and rare roasted beef fillet and shiitake mushroom dumplings with chilli jam.

Image

Snapper fillets with wedges of kumera potato provided something more substantial as family and friends mingled and the Katering chefs tended to the lamb on the spit. Basted with rosemary, lemon and garlic oil the lamb was served with crunchy potatoes and avocado salad.

The Katering pastry chef created a beautiful croquembouche held together with sweet, delicate toffee that was filled with vanilla bean custard. Mini-desserts of vanilla bean panacotta, pavlova, crème caramels, rocky road and chocolate coated strawberries added the final sweet touch.
