Don’t forget to tune into Kate’s wedding show on 2GB every Wednesday and Saturday night for Kate’s fabulous tips, experiences and stories.
Just last week she touched on the expectations of brides on their maid of honour – imagine having to fly from Sydney to Brisbane just for a dress fitting!
And the beautiful traditions of different religious weddings. Jewish couples get married under a piece of cloth called a huppah that represents the couple’s new home. They also have a bedeken ceremony prior to the wedding that is a small and intimate ritual attended by only the bridal couple, family and a rabbi. The couple are blessed and the groom then covers his bride with a veil that she wears until the end of the huppah ceremony.
She also spoke of the different catering requirements including Kosher meals where meat and milk cannot be mixed and the importance of whiskey at a Jewish wedding!

A Touch Of The Seasons

There’s nothing we love more than working with others who share our love and passion for food. At a recent dinner held in the historic Carnegie Hall in Darlinghurst, Katering had the pleasure of working with some well known Italian chefs, including Stefano Manfredi from Bells at Killcare, who taught us a few new tricks in the kitchen.

Working together, we created a beautiful menu inspired by the four seasons of the year.

Guests started with canapes reflecting the summer months, follwed by an entree inspired by Autumn and designed by Stefano Manfredi. His incredible dish of risotto di funghi e castagne (a mushroom and chestnut risotto) captured the wonderful autumn flavours.

The main was created by Armando Percuoco and was designed to reflect the winter months. A deliciously warming vitello con barbabietola e salsa verde (veal medallions with caramelised beetroot and salsa verde) was served with garlic and rosemary potatoes. 

For something sweet, Donato Toce put together a fabulous spring dessert of fragolina de bosco (wild strawberry sorbet), with a burnt honey mousse, bergamot jelly and pistachio crunch. 

The night perfectly captured how changing seasons influences our dishes and we had such fun working with a new team.

Wedding Videos: Why You Should Use Them

As the Creative Director for Katering’s fabulous events and weddings, Kate can’t recommend the use of videographers enough.

Worried about bright flashing lights and obtrusive crew? Relax. You’ll hardly notice the team at Soda are even there.

Kate recently styled a wedding for a wonderful couple who were thrilled with their decision to include video, in fact the bride said she loved it more than the photos.

“It captured the emotion on people’s faces and filled in the gaps that the bride doesn’t see on the day,” she said.

Just in case you needed another reason to tune into Kate’s Wedding Show on 2GB… this lucky listener was helped out with a wedding cake for his big day.

Calling in to ask Kate for some last minute advice, Nick revealed he had yet to organise a wedding cake. Kate was quick to respond and gave away one of her delicious cakes to complete Nick’s day. See her famous recipe in Kate’s Wedding Book.

A Sparkling Night To Remember

The Strand Arcade in Sydney was turned into a scene reminiscent of an English white wedding to celebrate the launch of the commemorative Australian Marriage Equality ring on Tuesday night.

Designed by award-winning jewellery designer and creative director of Mondial, Nadia Neuman, all proceeds from the sale of the ring went towards Australian Marriage.

Katering was honoured to not only provide the delicious food on the night, but to also donate 20 signed copies of Kate’s wedding book to the first 20 rings sold.

As though at a wedding reception, guests were treated to a selection of hand-picked canapes including:

  • Yabbie en croute with lime aioli and avruga caviar
  • Smoked salmon served on a dill blini with horseradish, crème fraiche and pickled cucumber
  • Tuna tartare in a crisp cone with seaweed toasts
  • Chicken, herb and celery ribbon sandwiches
  • Caramelised onion and duck parfait with sauterne jelly on brioche crust
  • Peppered beef on a potato roesti with truffled aioli and rocket
  • Fresh asparagus with goats cheese and pesto mayonnaise wrapped in char grilled eggplant
  • Smashed broad beans, pecorino and mint on charred bruschetta

The sparkling and pivotal affair was attended by Sydney politicians and celebrities in what was a truly magical night.

Southern Highlands Summer Weddings

Magical, romantic and distinctly unique. The wedding of Anna and Brendon at Montrose Berry farm in Sutton Forest was a blend of wonderful personalities and unconventional tradition.

This beautiful heritage country estate was transformed into a wonderland of magic. Reflecting the country surrounds, cabanas were dotted around the grounds and intricately decorated with moose heads, dark leather couches, candelabras and armchairs. The wedding party sat at a simple wooden table with white cushions and vibrant purple flowers.

Choosing a cocktail style wedding, guests enjoyed an antipasto table after the ceremony that was overflowing with ripe cheeses, olives, cured meats and freshly grilled vegetables.

Champagne and canapes including mini beef paninis kept guests well nourished before the more substantial dishes of barramundi served in abalone shells and lamb cutlets followed.

Belle Readers Dinner

Katering had the absolute pleasure of hosting the Belle Readers dinner at the beautiful Roslyn Oxley Galleries in Sydney. Featuring special guest and artist Del Kathryn Barton, the art loving guests listened to her experiences and stories as an artist in what was a truly memorable night.

Belle readers were given an inside glimpse into the life of one of Australia’s most respected artists. With a focus on sensuality, creativity and passion, Grandiflora chose flowers that were open and in full bloom to create a sense of intimacy amongst the tables.

Featured in this month’s Belle magazine, readers are given a sneak peek into this private dinner including the recipes of Katering’s finely selected menu. Guests enjoyed open crab ravioli with tomato bisque to start and snapper with golden beetroot, snow pea, broad beans and fennel. The night came to a close with a cherry and chocolate mousse cake with a rich chocolate ganache.

An inspirational evening, the night was both personal and enriching and Katering is proud to have been part of such a wonderful event.

We’re already halfway through the busy festive season and our team at Katering have been working full speed to deliver incredible weddings, birthdays and intimate celebrations.

Looking back over the past few weeks, our amazing office and kitchen staff have been creating the most memorable events, each uniquely tailored to our special clients, and we are loving every minute of it.

We have cooked with Martin Boetz for the Historic Houses Trust at Government House, we have hosted dinners for Princess Mary and Yoko Ono in the eastern suburbs, we have traveled for beautiful country weddings and created fabulous private parties.
